Dairy- Free Broccoli Coconut Soup

Broccoli is rich in antioxidants that fight inflammation by reducing the level of inflammatory markers (called cytokines). These anti-inflammatory properties of broccoli may also help to fight off bacteria and viruses.

Ingredients:

  • 1 large broccoli, peeled and chopped

  • 2 tbsp of coconut oil

  • 1 medium onion, chopped

  • 2 cloves of garlic, crushed

  • 2 cm of fresh ginger, peeled and minced

  • 1 tsp of cumin

  • 1 tsp of turmeric powder

  • 1 small bunch of fresh coriander

  • 1 small bunch of fresh parsley

  • 2 cups of vegetable Bouillon (I used Dr Coy's Organic Vegetable Bouillon)

  •  ½ can of full-fat coconut milk

Preparation:

  1. Heat the coconut oil in a medium-sized pot.

  2. Add the onions and cook stirring occasionally for 5-6 minutes.

  3. Then, add the garlic and ginger and sauté for 2 minutes.

  4. Add the broccoli and vegetable Bouillon and cook gently for about 10 minutes.

  5. Stir in the turmeric and cumin and let it simmer for another 5 minutes.

  6. Meanwhile, tie the parsley and coriander together.

  7. Add the herb bundles to the pot, coconut milk and cook for 5 minutes.

  8. Then, remove from heat and, using a stick blender, blend the soup. Garnish with coriander and parsley.
