Grilled Zucchini Salad
Easy grilled zucchini salad with stuffed olives, red pepper and mixed salad leaves.
This salad is light and delicious. Can be served as a main dish or as a starter.
Ingredients:
Salad:
2 medium zucchinis, sliced lengthwise
A handful of garlic stuffed olives, sliced thinly (you can use unstuffed if you like)
3 cups of mixed leaves (I used rocket, watercress and spinach mix)
1 red pepper, sliced
A handful of pecan nuts
Dressing:
Flesh of 1 lemon, chopped
2 garlic cloves, squeezed
2 tbsp of olive oil
2 tbsp of water, mineral or filtered
Sea salt and pepper to taste
½ tsp of thyme
Preparation:
Heat a grill pan on medium heat.
Brush sliced zucchini with olive oil and place them on a grill pan in a single layer.
Allow them to char for 2-3 minutes on each side, do not overburn.
Meanwhile, prepare the dressing by combining all dressing ingredients, and then set aside.
Place mixed leaves on a serving plate, then arrange with grilled zucchinis, red pepper and olives.
Drizzle the dressing over salad and enjoy.
