Vegan Dark Chocolate Strawberry Avocado Truffles
What I love about truffles, is that options are endless and you can make them as appealing or basic as you like. There are no rules and limitations! If you have a sweet tooth, you can cheat your sugar craving with this effortless sugar-free recipe.
Ingredients:
1/2 cup of dark chocolate chips
1/2 mashed avocado
1/2 cup of dried Goji berries, crushed
1/2 tsp of Vanilla extract
1 tbsp of chocolate extract (optionally)
6 dates to sweeten (soaked in water, drained)
5 fresh strawberries
1 tsp of coconut oil, melted
Preparation:
Place the chocolate and coconut oil in a medium-sized mixing bowl over a saucepan of simmering water and melt until completely smooth.
Blend the dates, avocado and strawberries in a food processor until they form a paste.
Now stir a paste into the melted chocolate mixture and combine until completely smooth.
Place the mixture in the fridge to set for about 20-30 minutes (or until slightly firm).
Meanwhile, crush the Goji berries with a mortar.
Then roll the chilled mixture into balls (mixture shouldn’t be too sticky) and coat each ball into the crushed Goji berries.
Can be eaten immediately or refrigerated for 1 day in a covered glass container. Enjoy!
