Turmeric Potatoes, Quinoa, Green Kale with Poached Egg
Healing bowl with turmeric sweet potatoes, quinoa and green kale. It’s a bowl of nutritious and colourful filling food.
Kale is one of the most nutritious food on the planet and it’s loaded with powerful medicinal components (antioxidants, vitamin C, K, Magnesium and many many more).
If you want to add something nutritious to your meal, add kale.
Ingredients:
Potatoes:
1 sweet potato
1 cup of vegetable broth
1-2 tsp. of turmeric
2 garlic clove, minced
Salt and pepper
Kale:
1 tbsp. coconut oil
1 cup (packed) cleaned and chopped kale
1 tsp. of sesame seeds
2 scallions, thinly sliced
Salt and pepper to taste
Quinoa:
½ cup cooked quinoa
Egg:
1 fried or poached egg
¼ tsp. of coconut oil
Preparation:
Mashed potato: Cook sweet potato in vegetable broth over medium-high heat. Add minced garlic and turmeric. Simmer until potato is soft and the liquid is almost absorbed. Transfer into a small bowl and season with salt and pepper.
Kale: Heat coconut oil over medium-high heat in a medium sauté pan. Add kale and scallions, season with a pinch of salt, and sauté for about one minute. Add the minced garlic clove and sesame seeds.
Quinoa: Rinse the quinoa before cooking. Place the quinoa, water and a pinch of salt in a large pot over high heat. Bring to a boil, then lower heat and cook for about 15 minutes until all of the liquid is absorbed (but the quinoa is still wet). Turn off the heat and let sit for at least 5 minutes. Fluff with a fork before serving.
Serve each bowl with the mashed potatoes, quinoa, and kale and scrambled or poached eggs.
Top with lemon juice, chopped parsley and sesame seeds.Enjoy :-)
