Super Seeds Bars

Here’s a simple recipe for sugar-free, eggs-free, gluten-free, super seeds bars that only take 15 minutes to prepare them.

High in protein and healthy fats, these super seeds bars make for a simple breakfast on the go or an energy-boosting snack.

Ingredients:

  • 1 cup of gluten-free, organic oats

  • 1/2 cup of sliced almonds

  • 1/4 cup of seeds (pumpkin, sunflower, chia, flax, hemp, sesame)

  • 1 tsp of cinnamon

  • 1/2 cup of dates (seedless, soaked in boiling water) or 1 banana (mashed)

  • 1/4 cup of melted coconut oil

Instructions:

  • Add dates to a bowl and pour boiling water over them. Let them soak for half an hour. Alternatively, add a ripe banana.

  • Meanwhile, combine the oats, almonds, seeds and cinnamon in large bowl.

  • Add the dates (or mashed banana) and 2 tablespoons of their soaking water to the food processor and mix on high speed until they are well broken up into a paste.

  • Add in the melted coconut oil, then pour the date mixture into the bowl, add the rest of the ingredients and mix thoroughly.

  • Spread the mixture out into a small dish lined with parchment paper and press the seed bar mixture firmly into the dish.

  • Chill in the fridge for about an hour, then take out, chop into bars and serve.
