Green Matcha Energy Bars
In the mood for a sweet and energising treat?
Satisfy your snack cravings with this easy and full of antioxidants recipe for homemade green Matcha energy bars. Matcha tea is made from the entire leaf and it contains a more concentrated amount of antioxidants and beneficial plant compounds than other green teas.
Ingredients:
1 cup of mixed nuts
1/2 cup of pitted dates, soaked in water, seedless
1-2 tsp of green Matcha tea
1/4 cup of pumpkin seeds
1/4 cup of Goji berries ( or cranberries)
Preparation:
Add the dates and 2 tablespoons of their soaking water to the food processor, then add the nuts and Matcha tea powder. Mix until a rough dough has formed.
Add the pumpkin seeds and pulse several times until combined.
Also, add the Goji berries or cranberries mix thoroughly.
Place a sheet of parchment paper into a small dish and press the seed bar mixture firmly into the dish.
Chill in the fridge for about an hour, then take out, chop into bars and serve. Enjoy :)
