Gluten-Free Energy Balls

These energy balls are gluten-free, full of natural goodness and no added sugars. They are perfect for healthy snacks and breakfast on the go and can be stored in the fridge for up to 1 week.

Ingredients:

• 200g of creamed coconut, melted (I used Patak’s from Tesco)

• 200g of mixed nuts (non-salted)

• 3 tbsp of raw cocoa powder

• approx. 1/3 of a cup of dates ( use less if you wish) and 1banana 

• 1 tsp of vanilla essence (I used Taylor & Coledge)

• 50g of seeds ( pumpkin, flaxseeds)

• 3 tsp of nut milk (or water)

To decorate:

  • Some unsweetened coconut flakes, sesame seeds, cinnamon

Preparation:

  • Soak dates and nuts for a couple of hours in a small amount of water, drain.

  • Place all ingredients in a blending container and blend until smooth.

  • Form little balls, if the dough is too sticky, put it into the fridge for 10 minutes and try it again.

  • Pour the unsweetened coconut, sesame seeds or cinnamon, whichever you prefer onto a plate and coat each of the balls in the topping of your choice.

  • For best results, chill in the fridge for about an hour before eating, if you can wait that long!
