Deeply Chocolatey Healthy Brownie
This brownie is not only deliciously rich and chocolatey, but also packed with nourishing ingredients. Red kidney beans provide plant-based protein and fiber, helping to stabilize blood sugar and support gut health. Almond (or peanut) butter adds healthy fats and magnesium, while cocoa powder is a source of antioxidants. Gluten-free oats add slow-digesting carbohydrates and beta-glucans, beneficial for heart health. Sweetened naturally with coconut sugar, banana, or dates, this brownie is free from refined sugar and can easily be adapted to suit various dietary needs. With dark chocolate chips rich in flavonoids, it’s a treat that supports both mood and immune health.
Ingredients:
~400g canned red kidney beans (well rinsed and drained)
1/4 cup almond butter (or high-quality peanut butter – unsweetened, no added oil or salt)
2 tbsp cocoa powder
1/2 cup gluten-free oats
1/4 tsp salt
1/3 cup coconut sugar (or 1 ripe banana, or 6 dates)
1/4 cup coconut oil
2 tsp vanilla extract
1 tsp baking powder
1/2 cup dark chocolate chips (min. 70% cocoa) or same amount of chopped dark chocolate pieces
Ingredients for the Frosting:
1/4 cup plant-based milk
1/4 cup butter (or coconut oil)
2/3 cup chocolate (can be milk or dark)
1/2 tsp vanilla extract
Preparation:
Preheat the oven to 180°C (356°F).
In a small saucepan, gently melt the coconut oil and nut butter, stirring to prevent sticking. Remove from heat.
In a food processor or blender, blend all the remaining brownie ingredients (except the chocolate chips) until smooth and creamy.
Add the melted coconut oil and nut butter, then stir in the chocolate chips with a spoon so they’re evenly distributed.
Line a loaf tin with parchment paper and pour the brownie mixture in, smoothing the top.
Bake for 16–18 minutes at 180°C. Remove from the oven and start preparing the frosting.
To make the frosting:
Place all frosting ingredients into a small saucepan and heat until fully melted and combined.
Remove from heat, let cool slightly, then spread evenly over the warm brownie.
Place in the fridge to set.
