Buckwheat Bread Without Yeast
Buckwheat flour is a fantastic substitute for traditional wheat flour in recipes such as cookies, pancakes, and bread, especially when the leavening agent isn't required.
This gluten-free bread is a boon for those with gluten sensitivities, not only offering a scrumptious alternative but also delivering a bounty of health benefits. Packed with essential nutrients, abundant fiber, and beneficial resistant starch, this bread could potentially enhance your digestive health, stabilize blood sugar levels, and promote a healthier blood pressure. It's undoubtedly one of the easiest, yeast-free, gluten-free recipes you'll come across!
Ingredients:
2.5 cups of unroasted buckwheat, meticulously washed
3 cups of filtered or mineral water
1 teaspoon of salt
1 cup of a delightful blend of nuts and seeds (I suggest sunflower seeds, unground flaxseeds, a tablespoon of chia seeds, pumpkin seeds, and a medley of your favorite mixed nuts)
For an extra touch of flavor, consider adding 1 cup of black olives and sun-dried tomatoes (optional)
Preparation:
Commence by giving the buckwheat a thorough rinse before placing the groats in a bowl, setting the stage for this amazing bread.
Submerge the groats in filtered or mineral water and let them soak for a patient 12 hours. It's important not to seal the container too tightly, so just cover it with a light tea cloth.
Throughout this soaking period, occasionally stir the groats with a gentle wooden spoon.
Once the 12-hour soaking is complete, blend the unroasted buckwheat along with the water it has been soaking in. Aim for a smooth, creamy consistency.
Introduce the salt, and generously mix in the delightful assortment of nuts and seeds.
To ensure your bread doesn't stick, generously grease a baking tray with oil or butter and sprinkle it with gluten-free oats.
Gently transfer the prepared dough into the baking tin, and then allow it to work its magic in the oven for approximately 1.5 hours at 150°C.
The final step is to exercise patience and let the bread cool in the tin before removing it. Then, savor each delightful slice. Enjoy the delicious, gluten-free goodness!
