Apple Bacon Cranberry Christmas Salad
This beautiful and refreshing salad is a perfect addition to our meal, especially during the Festive time.
Ingredients:
1 small head of mixed salads
2 cups of spinach
2 apples thinly sliced
1 cup of dried cranberries
6 slices of bacon cooked (I used “Naked bacon”)
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
1/2 small red onion, thinly sliced
1/3 cup of Feta cheese crumbles
1/2 cup of pumpkin seeds, toasted
1/2 cup of walnuts, toasted
Dressing
1/4 cup extra virgin olive oil
2 tbsp.of apple cider vinegar
2 tbsp. of water
1 tablespoon of Nigella seeds
salt and pepper to taste
1 clove of garlic, crushed
Preparation:
Toast walnuts and pumpkin seeds flakes on a hot pan until golden brown, stir often as they tend to burn simply. Set aside to cool.
Place the mixed salads leaves and spinach on a dish; add sliced apples, chopped peppers and onion.
On the frying pan, cook bacon until lightly brown, stirring it and then transfer it to paper towels to drain excess grease.
In a large bowl, place all of the dressing ingredients and whisk to combine.
When ready to serve, drizzle the salad with dressing and decorate with Feta cheese and cranberries.
