Apple Bacon Cranberry Christmas Salad

This beautiful and refreshing salad is a perfect addition to our meal, especially during the Festive time.

Ingredients:

  • 1 small head of mixed salads 

  • 2 cups of spinach

  • 2 apples thinly sliced

  • 1 cup of dried cranberries

  • 6 slices of bacon cooked (I used “Naked bacon”)

  • 1/2 red bell pepper, chopped

  • 1/2 yellow bell pepper, chopped

  • 1/2 small red onion, thinly sliced

  • 1/3 cup of Feta cheese crumbles

  • 1/2 cup of pumpkin seeds, toasted

  • 1/2 cup of walnuts, toasted

Dressing

  • 1/4 cup extra virgin olive oil

  • 2 tbsp.of apple cider vinegar

  • 2 tbsp. of water 

  • 1 tablespoon of Nigella seeds

  • salt and pepper to taste

  • 1 clove of garlic, crushed 

Preparation:

  1. Toast walnuts and pumpkin seeds flakes on a hot pan until golden brown, stir often as they tend to burn simply. Set aside to cool.

  2. Place the mixed salads leaves and spinach on a dish; add sliced apples, chopped peppers and onion.

  3. On the frying pan, cook bacon until lightly brown, stirring it and then transfer it to paper towels to drain excess grease.

  4. In a large bowl, place all of the dressing ingredients and whisk to combine.

  5. When ready to serve, drizzle the salad with dressing and decorate with Feta cheese and cranberries.
