Healthy Protein Bars With Peanut Butter And Oats

Soft and yummy homemade Peanut Butter Protein Bars with gluten-free oats, dates, and…peanut butter. No-bake, healthy, and sugar-free!

Ingredients:

  • 4 tbsp of peanut butter

  • 1 banana

  • 2 tbsp of coconut oil

  • 6 dates, soaked in hot water, drained

  • 2 cups of gluten-free oats

  • ½ cup of rice protein powder (vegetable protein)

  • 3 tbsp of flaxseeds or Chia seeds

  • 3 tbsp of pumpkin seeds

  • 1/2 tsp of ground cinnamon

Preparation:

  • Line a rectangular baking pan with parchment paper.

  • Place the peanut butter and coconut oil in a medium heatproof bowl over a saucepan of water.

  • Bring the water to a simmer over medium-high heat, stir until the mixture is smoothly combined. Remove the bowl from the saucepan and set aside.

  • Puree dates in a food processor or blender.

  • To the bowl with the peanut butter mixture, add the oats, protein powder, flaxseed, pumpkin seedsdates paste and cinnamon.

  • Stir to combine.

  • The mixture will seem very dry at first but will come together as you stir. 

  • Press the mixture firmly into the prepared pan and refrigerate for 1 hour or until firm.

  • Slice into bars of the desired size and enjoy!
