Gluten-Free Sweet Potatoes Brownie

Sweet potatoes are great for digestive health as they contain prebiotic fibre which promotes healthy gut bacteria.

 These healthy and rich sweet potato brownie tastes delicious and makes for a perfect healthy treat.

Ingredients:

  • 3/4 cup of sweet potatoes, cooked and mashed

  • 2 tbsp of chia seeds

  • 6 tbsp of water

  • 1/2 cup of melted coconut oil

  • 1/2 cup of raw cacao powder

  • 1/2 cup of coconut flour

  • 1/2 cup of coconut sugar

  • 2 tsp of Vanilla extract

  • 1/4 cup of dark chocolate chips

Preparation:

  • Preheat oven to 180 °C.

  • Peel and steam sweet potatoes until tender. Mash with a fork - you need 3/4 cup.

  • Stir together chia seeds and water and let sit for 5 minutes until jelly-like.

  • Melt coconut oil, remove from heat.

  • Stir in cacao powder, coconut sugar, vanilla, chia seeds mixture and mix well.

  • Fold in coconut flour and chocolate chips without over mixing

  • Pour into a parchment-lined 20 x 20 cm baking pan and bake for 50 minutes until you can insert a toothpick and it comes out clean.

  • Let it cool and place in the fridge.
